Recipe for St. Patrick’s Day: Green Eggs and Ham

green eggs&hamHappy St. Patrick’s Day! If you are looking for something fun to do with your kids today, you can try making Green Eggs and Ham. My 4 year old LOVES Dr. Seuss right now, so when I asked her if she wanted green eggs and ham for dinner, she was very excited.

This is such a simple recipe – but I wanted to share it since it is such a hit at my house.

Green Eggs and Ham Recipe

  • 8 eggs or 2 cups egg substitute
  • 2 Tbsp milk
  • 4 slices ham, diced
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1-2 drops of green food coloring

You can also add it some fresh veggies like broccoli, green bell pepper, or spinach to give added nutrition. My boys actually love broccoli and I try to put spinach in most dishes for me.
