Oven tacos

Cinco de Mayo is right around the corner! If you are looking for an easy dinner that the whole family will love – check out these Oven Tacos. Simple to make, and you can add your favorite toppings for each family member.

This is also a dish that you can start earlier in the day and then finish right before dinner if you are limited on time (like I am). If you do all your prep work earlier, it will save you time. Plus, having Taco Tuesday at home is much cheaper than taking the whole family out to a restaurant!

Making oven tacos

Here’s how you can make these easy Oven Tacos:


  • 1 lb Ground Beef
  • 5 oz Rotel Tomatoes and Green Chiles
  • 8 oz Refried Beans (or make your own)
  • 1 packet Taco Seasoning
  • 1 box Corn Taco Shells
  • 8 oz Shredded Cheddar Cheese
  • Your favorite toppings (lettuce, tomatoes,sour cream, etc.)


  1. Brown and drain ground beef.
  2. Add seasoning, beans, tomatoes and 1/2 cup water.
  3. Mix well and bring to a boil.
  4. Reduce heat and simmer for 5 minutes.
  5. Preheat oven to 400.
  6. Fill shells and arrange in 9×13″ baking dish.
  7. Evenly distribute about half of the cheese over the tacos.
  8. Bake 10 minutes or until cheese is melted.
  9. Garnish with toppings and remaining cheese.
