Peanut Butter Banana Quinoa MuffinsMuffins are an easy item to make on the weekend and have them for quick breakfasts or mid-morning snacks during the week. These Peanut Butter Banana Quinoa Muffins are loaded with healthy protein to help keep you full.

I use applesauce in place of vegetable oil to make them a bit healthier and you can also use egg beaters or egg whites instead of a full egg. When baking with bananas, I usually wait until they are nice and ripe. The banana flavor will be more intense depending on how ripe of bananas you use.

Peanut Butter Banana Quinoa Muffins


  • 1 cup Quinoa
  • 1 cup Water
  • 1 1/2 cup Spelt Flour
  • 1/2 cup Flour
  • 1 cup Brown Sugar
  • 2 tsp Baking Powder
  • 1 tsp Salt
  • 1/4 cup Applesauce
  • 3 Bananas
  • 1 cup Peanut Butter (try Homemade Peanut Butter)
  • 1 cup Milk
  • 1 Egg
  • 1 tsp Vanilla

  1. Preheat oven to 350.
  2. Rinse Quinoa in fine strainer until water runs clear.
  3. Line muffin pan with paper cupcake liners.
  4. Bring the quinoa and the water to a boil. Reduce heat, cover and simmer 10 minutes or until water has been absorbed.
  5. Whisk together the flours, brown sugar, baking powder, salt, and cooked quinoa.
  6. Combine the oil, peanut butter,  milk, egg, bananas and vanilla at medium speed.
  7. Slowly add the dry mixture, mixing on slow until combined.
  8. Fill the prepared muffin cups.
  9. Bake 20 minutes or until a toothpick inserted into the center comes out clean.
