Copycat Chipotle Cilantro Lime Brown Rice Recipe

I love Chipotle, especially their cilantro lime rice, but I don’t love the cost of eating out all the time, so I decided to try my own copycat recipe. I like to use brown rice with most recipes now because of the higher fiber, plus it is much more flavorful to me. Try my Copycat Chipotle Cilantro Lime Brown Rice and let me know what you think!

Pair this side with some homemade refried beans, some black beans as a healthy side to your next taco or burrito dinner.

Copycat Chipotle Cilantro Lime Brown Rice Recipe

Ingredients:

  • 1 cup brown rice
  • 2.5 cups water
  • juice from 1 lime
  • half bunch of cilantro, chopped
  • 1 teaspoon salt

Directions:

  1. Put rice and water in pot to boil. Once boiling, reduce heat to low and simmer, covered, until most of the liquid has been absorbed (about 40-50 minutes).
  2. Let rice stand for 5 minutes and then fluff with fork.
  3. Combine lime juice, cilantro, and salt in small bowl.
  4. Pour juice mixture over rice and stir.
  5. Top with fresh cilantro and serve!

I love cilantro so I added the extra on top, but if you don’t like it that much, just leave off the final topping.
