Breakfast Burritos RecipeMy kids are back in school, how about yours?  To make our mornings go smooth, and to make sure they get a well balanced breakfast to keep them alert at school, I make these Breakfast Burritos. These are simple to make and easy to take on the go. My husband wraps his in foil and takes it to work.

Homemade Breakfast Burritos are so much healthier than stopping by the drive through and you can fill it with the ingredients you want. If you want a spicier burrito, you can add jalapeno or salsa. You can also add more veggies, like broccoli, mushrooms, zucchini, or anything else in season.

Homemade Breakfast Burritos Recipe

Ingredients: (Yields 4 burritos)

  • 4 Burrito size Tortillas
  • 6 Eggs
  • 2 tbsp Milk
  • 1/2 cup cooked crumbled Sausage or Bacon
  • 1/2 cup Sharp Cheddar Cheese
  • 1/8 cup chopped Bell Peppers
  • 1/8 cup chopped Onion
  • 2 tsp Butter

  1. Sautee Onions and Bell Peppers until tender. Remove from pan and set aside.
  2. Whip together eggs and milk in a bowl.
  3. Melt Butter in skillet or pan and cook scramble eggs.
  4. Place tortilla on microwave safe place and evenly sprinkle cheese over surface.
  5. Microwave for 45 seconds until cheese is melted and tortilla is soft.
  6. Top with 1/4 of scrambled eggs, 1/4 of the meat and 1/4 of the sautéed veggies.
  7. Roll in 1 side, then fold in the ends, and flip over the other side.

These stay well, too, so you can make them the night before and then just reheat them in the morning when you don’t have as much time.
