Here is an easy no-bake banana cream chocolate eclair recipe that is going to leave you banana lovers wanting more!!  It’s smooth and creamy and my number one comfort food. Each and every time I make this recipe it is gone in a flash and I get rock star mom status for the rest of the day. You could also add a layer of bananas into the cake if you wanted to but we prefer just a bit added to the top before we dig in. I hope you love it as much as we do. Enjoy!

No-Bake Banana Cream Chocolate Eclair

Ingredient (for the cake portion)

  • 2 small boxes of banana cream pudding
  • 1 medium container of cool whip
  • 3 cups cold milk
  • 1 box graham crackers

Directions

IMG_45361) In a medium bowl add milk and pudding. Beat with a wire whisk until it starts to thicken. Fold in cool whip and set aside.

2) Get a 9×13 in cake pan or something of similar size. Line the bottom of the pan with graham crackers. Poor half of the pudding mixture over the graham crackers and spread evenly then lay another layer of graham crackers over the pudding and poor the remaining pudding mixture over that and spread evenly.

3) Cover the pudding again with a layer of graham crackers and place in the refrigerator to chill.

  • 1 cup sugar
  • 1/3 cup cocoa
  • 1 tsp. vanilla
  • 1/4 cup milk
  • 1 stick of butter

Directions

1) Bring sugar, milk and cocoa to a boil in a medium saucepan over medium heat and cook one minute.

2) Remove from heat and add butter and vanilla and blend well.

3) Beat with a wire whisk until thick.

4) Poor icing mixture over the top layer of graham crackers and spread evenly. Refrigerate until ready to eat.

5) Top with sliced bananas to serve.
