This Apple Harvest Cake is a delicious treat for the Fall Season! I’ve always wanted to go apple picking, but haven’t had a chance yet. Instead, I just enjoy all the wonderful apples at the store or a local Farmer’s Market.  This cake celebrates apple-picking season. It is great not only for dessert, but also would be great for breakfast with coffee. It’s delicious, easy to make, and best yet – you probably have most of these ingredients on hand so it is low cost too.

  • 2 ¼ cups sugar, divided
  • 1 cup vegetable oil
  • 4 eggs
  • ¼ cup orange juice
  • 2 ½ teaspoons Vanilla extract
  • 3 cups all purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 2 medium tart apples, chopped into cubes (I used granny smith apples)
  • 2 teaspoons cinnamon
  • Whipped cream and additional cinnamon to put on top (optional)
  1. Pre-heat oven to 350 Degrees
  2. In a large mixing bowl, beat together 2 cups of sugar, eggs, orange juice, and vanilla extract until it is nice and smooth
  3. Then, in a separate bowl, combine the flour, baking powder, and salt. Beat into sugar mixture, and then add apples.
  4. Combine your cinnamon and remaining sugar. In a 13x9 in. baking pan spread out half of your batter. Then sprinkle your cinnamon sugar mixture over top, then cover with the rest of your batter.
  5. Bake for 40 minutes
  6. Let cool before slicing.
