One of the best things about fall is that I can start eating pumpkin everything without looking like the pumpkin crazy person I truly am. Pie, rolls, cookies, muffins, lattes- it doesn’t matter. Throw me some pumpkin in it and this is one happy girl.  These muffins are lightly sweet and very moist. I think they make for a great breakfast grab and go. If you love pumpkin flavor like I do give these Chocolate Chip Pumpkin muffins a try, my kids even love them.

Chocolate Chip Pumpkin Muffins

Pumpkin Chocolate Chip Muffins

  • 1 ½ cups all-purpose flour
  • (I use a combo of half white half whole wheat in most of my baking)
  • ½ tsp. baking soda
  • ¾ tsp. baking powder
  • 1 tsp. pumpkin pie spice
  • ½ tsp. ground cinnamon
  • ¾ cup packed brown sugar
  • ¼ cup vegetable oil
  • 2 eggs
  • ¾ cup canned pumpkin
  • ¼ cup water
  • ½ - ¾ cup chocolate chips
  1. In large bowl combine all dry ingredients well except chocolate chips, set aside.
  2. In separate bowl combine all wet ingredients until thoroughly combined.
  3. Mix your wet and dry ingredients, fold in chocolate chips.
  4. Fill muffin tins about ⅔ of the way full of batter-either spray muffin tin with nonstick spray or use liners.
  5. Bake in oven preheated to 400° for 22-25 minutes.
