Homemade Whole Wheat Pop Tarts
If your kids are like mine, they probably like Pop Tarts – but I’m not as crazy about extra chemicals, etc they get when they eat them.These homemade pop tarts contain no partially hydrogenated oil, and depending on your fillings- no high fructose corn syrup. Two no-no’s in a lot of households. The majority of the ingredients are pretty healthy. Plus, with this homemade whole wheat pop tarts recipe, you can pick the fillings that you and your kids want. The possibilities of what you create are endless.
- 2 ½ cups whole wheat flour
- ¾ cup all-purpose flour
- ¼ cup ground flax seed
- 1 cup plain Greek yogurt
- 12 Tbsps. melted butter
- Combine all ingredients until well mixed, and knead for just a minute or two.
- On a well-floured surface roll your dough to about ⅛” thickness.
- You have several options at this point; you can cut traditional rectangles using a pizza cutter, you can cut with cookie cutters, or you can do like I did and use a wide mouth Mason jar ring (it made 12 pastries- top and bottom).
- Use half for the bottom –spoon a Tbsp. or so of filling in the middle, top with the other half, and crimp edges with a fork.
- Bake in a oven preheated to 350 on a parchment lined baking sheet for 12 -14 minutes.
- To freeze; allow to cool, layer between sheets of wax paper, and place in a freezer storage bag.
The filling is where you can really let your imagination take off, if you can think it up, you can probably put in these Pop Tarts. We made 4 different types this round. We used a scoop of chocolate chips and a couple marshmallows to create a S’more one, Strawberry Jam (straight from the jar), I made my own fresh fruit filling by using a fork to smash a couple strawberries and blackberries, and added a tsp. of honey, and finally I made and apple pie variety by using a scoop of apple pie filling from the can.
