Baked Zucchini & Parmesan Bites

With all the zucchini growing in our garden, I’m trying out new fun recipes and this one is a new family favorite! We picked a couple zucchini this week and came up with a healthier version of fried zucchini by baking it. Everyone loved it – even baby girl! So, if you are looking for an easy appetizer or side dish (great for a party, dinner, or just an afternoon snack), I recommend these Baked Zucchini & Parmesan Bites.

Ingredients:

  • 2 Zucchini, sliced into 1/4 inch chips
  • 1/2 cup Italian bread crumbs (or regular, but the Italian gives added seasoning)
  • 1/4 cup Parmesan Cheese
  • 2 Eggs (whites only for healthier version)
  • Cooking Spray

Directions:

  1. Preheat oven to 450 degrees. Coat cookie sheet with cooking spray.
  2. Place eggs in bowl.
  3. Mix bread crumbs and parmesan cheese in a separate bowl.
  4. Dip zucchini slice in eggs, then coat with bread crumbs mixture (make sure to get both sides) and place on cookie sheet.
  5. Bake for approximately 10 minutes, flip zucchini and bake for another 5-10 minutes. You want both sides to turn slightly brown to give crispness. (Oven times may vary, so watch your zucchini carefully)
  6. Serve with ranch dressing or pizza sauce (or even better, your own homemade spaghetti sauce!).

DSC_1376Of course you may want to double or triple this recipe depending on how many people you are having, or how much they love these! My family gobbled these up quickly and I can’t wait to pick more zucchini so we can make more.

    Thx for the recipe. I used crushed cornflakes for the breading since my girls are gluten free. They were super yummy.
