
I love Pumpkin – and one of my favorite eats, since I was a little girl, is Pumpkin Bread. There are so many different Pumpkin Bread recipes available. I tried making this one a tad healthier, but using whole-wheat flour, applesauce (in place of oil) and a bit less sugar than many recipes I’ve seen.
“Healthier” Pumpkin Bread
Ingredients: 2 1/2 cups of all-purpose flour
1 cup whole-wheat flour
1/2 tsp baking powder
1 tsp salt
2 cups white sugar
1 tsp ground cinnamon
1 tsp pumpkin pie spice
1 cup cinnamon applesauce
4 eggs (or egg substitute)
1 can pumpkin puree (15 oz)
1/4 cup water
Optional: 1/2 cup chopped walnuts, cranberries and/or chocolate chips
Directions:
1. Grease your pan(s ) that you’ll be using. Preheat oven to 350 degrees.
2. Mix all dry ingredients in large mixing bowl. Then add applesauce, eggs, water, and pumpkin until mixed well. Add in any optional ingredients
3. Bake 50-60 minutes until toothpick comes out clean.
Enjoy! This freezes well, too, so you can make some ahead of time.
