    Freezer cooking weekends! I love the convenience of pulling something from the freezer, throwing it in the oven and setting the timer. If my husband will be getting home before me I leave him instructions on how and what to put in the oven. (The crock-pot is my second favorite!)

    On weekends I try to cook up some staples for easy use during the week. For example, I make a pot of beans which can become bean burgers or filling for tacos. I might also make a pot of rice which can be used for stir fry or turned into a quick salad (just add chopped veggies and dressing). I also make double quantities and freeze half which can be thawed for a quick meal. And then, of course, there are sandwich nights and pancake nights … fun, quick meals.

    My husband and I will take one weekend a month and cook away. We’ll make a number of meals and freeze them. We’ll make meatloafs, breaded chicken, meatballs for spagetti and meatballs and sweedish meatballs and put these meals into servings for each meal. This way, on those really hectic nights, we just need to heat up the meals and add a side dish or two.

    my daughter only does preschool once a week but our routine probably won’t change that much when she is in school. My husband usually cooks dinner when he gets home from work while I tend to our daughter. He really enjoys cooking, and I am thankful he does because I hate it and am not good at it. Every once in awhile I will put a frozen dinner in the oven and microwave canned vegetables lol. I’ll be fixing my kids lunch box in the morning for school like I do now on her once day a week. =)

    I feed my grandkids on weekdays and generally it’s in the parallel processing. I supervise my grandson’s practicing or have him read to me for his required 20 minutes or reading. At lunch time when I make carrot sticks for my granddaughter’s lunch I make extra for dinner. I use things like Trader Joe’s precooked lentils which both of the kids love. I precook a big batch of forbidden rice–originally for myself, but my grandson begged for a taste and it is now a staple for him, too. Frozen vegetables are quick and nutritious.

    I start to prepare as many things as possible the night before :)

  • Plan ahead! Have veggies already chopped in the fridge. Have dry ingredients set out. etc. Then when you get home throw everything together and cook!

    Always cook to have leftovers…example cook 5lbs of ground beef, use 1lb and freeze rest in 1lb packages. Instant tacos, sloppy joes, chili etc.
