Kim is in Phoenix on April 16-18 to kick off the Libby’s Table-Gating Recipe Contest! Not in Phoenix or able to get to the raceway? No problem- you can submit your recipe, using your favorite Libby’s vegetables Here. Five finalists will win a trip to New York City for the Libby’s Get Back to the Table Month Recipe Cook-Off judged by country superstart Sara Evans!
Libby’s is the 3rd largest brand of canned vegetables with over 60 different varieties, including no added sugar or salt and Libby’s Organics. If you haven’t tried them yet, now is a great time because you can get a coupon for $.50 off two cans of Libby’s!
More about Kim: Kim and Jeff Burton have been married for 17 years and have two children, so they understand the importance of families eating together, even with a hectic schedule! Here are some of Kim’s tips for getting back to the table with family within a budget:
Keep it Quick, Simple and Fun- When it comes to family dinners, think affordable, simple AND delicious. Try using a crock-pot or making a casserole like Libby’s Kicked Up Mac and Cheese. My family is constantly moving and shaking so I am always looking for timesaving and quick recipes. I’ve learned over the years to keep a stocked pantry with items such as Libby’s Vegetables – they’re cost-effective, nutritious and really quick and easy to prepare.
Embrace Dinnertime- Most busy families wish for more time together – dinnertime is the perfect solution. Regular family dinners are one of the best things a busy family can do to stay close. Since the kids were little Jeff and I have made it a goal to sit down for dinner every night as a family.
Connect with Family and Friends- Since our lives are so hectic, when it comes to spending time with friends and family during the busy race season or summer holidays – keep things simple. Down-to-earth comfort food and time spent with the people we care about – what could be better?

I used the Libby’s Q’s to buy corn and we loved it. In our house, half of us prefer frozen corn while the other half prefer canned. This was a nice compromise!
