Since St.Patrick’s Day is next week, LifeAsMom decided to theme her Ultimate Recipe Swap this week with that holiday in mind.
Honestly, I have never tried a different recipe for the holiday (usually I just wear green), but since my 3 year old is old enough to enjoy something, I thought a kid’s friendly recipe would be appropriate.
A friend gave me the idea for this fun (and simple) recipe. (Thanks, Melissa!)
Green Eggs and Ham
- 8 eggs or 2 cups egg substitute
- 2 Tbsp milk
- 4 slices ham, diced
- 1/4 teaspoon of salt
- 1/4 teaspoon of pepper
- 1-2 drops of green food coloring
You can also add it some fresh veggies like broccoli, green bell pepper, or spinach to give added nutrition. (Amazingly, both of my boys love broccoli-even though hubby doesn’t-, so I’ll be added that.)
