
I love recipes that you can freeze, especially when I have found a great deal on some of the ingredients. As I’ve mentioned before, I like to stock up on good deals, and our extra freezer (which is pretty packed right now with all the freezer deals at the grocery stores!) definitely helps me. Plus, a slice of ice cold pie hits just the spot in the hot summer months…
This recipe is one of our family favorites! Now, honestly, it isn’t low calorie- however, it is SO yummy, no one will believe how simple and easy it is! Ready for the best key lime pie recipe?
Ingredients:
5 egg yolks, beaten
1 (14 ounce) can sweetened condensed milk
1/2 cup key lime juice
1 (9 inch) graham cracker crust (you can buy a prepared one, or make your own)
Directions:
1. Preheat oven to 350 degrees.
2. Combine egg yolks, sweetened condensed milk, and key lime juice. Mix well (I use my kitchen-aid mixer, but any beater would be fine).
3. Pour mixture into graham cracker crust.
4. Bake for 15 minutes. Allow to cool.
5. Cover and place in freezer. (It should be nice and cold in about an hour)
When serving, you can garnish with whipped topping and/or lime slices. This pie freezes very well and we enjoy it straight from the freezer (especially on a hot day!). However, letting it sit for approximately 5-10 minutes should soften it if desired.
We usually make several at a time to freeze since they last a few months. I wish I had a picture to show you, but we actually don’t have any more pie in the freezer-time to make more!
